    The Apprentice

    Eder a paulistano , whose, family always supported his dreams. He always hoped of going to Japan already speaking their language  even not having a Japanese background. Eder came across with Japanese gastronomy while searching for new knowledge in the culture. Since then fell in love and intensified his studies on this art. In 2017 he got his first job at Michelin a starred restaurant in São Paulo. He also has been an assistant of one of the most respected Sushi Chef of Brazil, jun Sakamoto , who broadened Eder's vision far beyond the Sushi.

    In 2008 he had the opportunity of working fir the Brazilian branch of the international Nobu Restaurant where he increased his learning and achieved more knowledge about the routine of a great restaurant.

    Not satisfied Eder reached for a new vision and challenge, when glancing the Taylor Made work of the ambassador of the Japanese Gastronomy in Brazil; Chef Telma Shiraishi from the renowned Aizome restaurant situated in São Paulo.

    Now his moment is to fulfill his dream of taking the high Japanese gastronomy in your comfort.
