Como vimos no post sobre o Chu-Toro, no período Showa (1926-1989), era a parte com menor valor para venda e isso também valia para o Otoro o qual era consumido apenas pelos trabalhadores manuais mais desfavorecidos, e antes dessa época os japoneses chamavam o atum de Gezakana que significa peixe inferior . 🤲🏻 ⠀
Atualmente é a parte de maior valor do peixe, isto porque sua carne é marmoreada e o teor de gordura alta faz com que a carne derreta em sua boca, é um sabor único, podendo ser apreciada em pratos como o sashimi e também nos nigiris, mas é claro que os hosomakis não iriam ficar de fora dessa lista. 🍣⠀⠀
Com essa procura desenfreada pelo Atum, hoje aproximadamente 80% da pesca dele é destinado para os restaurantes orientais, sendo assim o Atum entra para a lista de espécie ameaçada de extinção, por isso vamos ter consciência e manter o equilíbrio para que a espécie continue viva, pois é nossa obrigação. ✌🏻💖⠀⠀
